This recipe was given to me by Dorothy (Ferguson) Standish. She said it's an old Standish recipe, considered an essential item to have with fried eggs in the morning.
- 9 lb. ripe tomatoes (skinned and cut up) more or less 16 tomatoes
- 3 lb. brown sugar (more or less 6 cups)1 pint vinegar (2 cups)
- 3 Tbsp. cinnamon
- 1 Tbsp. cloves
- 1 ½ Tbsp. allspice
Boil until thickened (3 to 4 hours). Stir often as it burns easily (not too hot).
I have made it often and John was always looking for a jar of it.
